Chocolate Banana Muffins

Ok Chocolate and Banana… easy go together here so let’s make some muffins yo!

This time I will give you some pictures. Mostly because my phone was in my pocket and the kitchen wasn’t a mess while I was baking.

You’re going to need…

150g Soft Butter

3 Ripe Bananas Smushed up

100g Light Brown Sugar

2 Eggs

1 tsp of Vanilla

1/3 Cup Double Cream or Soured Cream

3 Tbs Cocoa

1 tsp Bicarbonate of Soda

225g Gluten free or regular flour

Pre-Heat to 200C and… you really should use muffin liners for this one. You can grease the tins if you trust them.

1. Mix up the Bananas and the butter in a bowl.. smash it all together.. .HULK SMASHHulk-smash

2. Add the sugar, vanilla and eggs and then mix it up so it’s well blended

3. Now add in the double cream, the B. soda and the cocoa and…. annnnddddd….. MIX   (I threw in a tiny handful of chocolate chips I had laying around)

4. Then add in the flour and mix it all together. Then let it sit for about 10 minutes for the flour to absorb the moisture. Fill the papers pretty full – all the way if you want big!2013-04-01 12.19.18

Bake them for about 15 minutes. They will come out cooked but squidgy. This is important because that means they’re awesome.
