This is a simple blondie recipe, easy to make, sit back and let it bake. The results are pretty fantastic to be honest. Pre-heat the oven to 180C
In a double boiler or bowl on pot….Melt down
1 Cup Butter
2 Cups of soft brown sugar
Once the mix is combined and the sugar dissolved you want to set it aside until it cools enough to touch. This will only take a minute or so really.
Mix in to this:
1 tsp Vanilla
Pinch of salt
1 1/2 Cups of Gluten Free or regular flour
Mix all that gently together so that it is combined but not over mixed.
Now add the fruit of your choice, in a quantity that suits you. I use about 1 cup of frozen mixed fruit and two bananas all mushed up in a bowl.
Pour all this in to a baking pan so that the mixture is about an inch or so thick. Then bake for 35-40 minutes so that the consistency is squidgy but firm. Then cool them for about 20 minutes before flipping the whole thing out on to a wire rack to cool for another 10 minutes.
